Turkey meatballs with curry

INGREDIENTS
- 180g of minced turkey meat
- 60 g of whole-wheat bread
- 1 egg
- 1 breadcrumbs (if necessary)
- 250 ml coconut milk
- 2 teaspoons of powdered curry
- 1 tablespoon of concentrated tomato sauce
- 1 tablespoon of Damiano organic roasted peanut paste
- salt
DIRECTIONS
Cut the whole-wheat bread into small pieces.
Beat the egg with some salt and add to the bread pieces. Mix it well and keep on side for 10 minutes until it becomes homogenous.
Add the minced turkey meat and mix all again. If necessary, add some breadcrumbs, so it won’t be too humid.
Prepare the meatballs as big as walnut and put on a baking tray coated with the baking paper. Bake it at 180°C for 10-15 minutes, the meatballs should be semi cooked.
Take off the meatballs from the oven and put it in a large pan. Add the coconut milk, curry, concentrate tomato sauce and roasted peanut butter and check if some more salt is needed.
Cook on a low flame for around 40 minutes, mix gently from time to time, until the sauce becomes creamy.
Serve the turkey meatballs with its sauce and salad or other vegetable side dish. It is also delicious with pilaf or steamed rice.
