Sweet potato salad with roasted hazelnut dressing
- 1 medium sweet potato
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of organic roasted hazelnut paste
- Juice of half lemon
Clean, peel and cut into the pieces the potato. Spread some olive oil and salt and bake it in the non-convection oven for 30min in 180°C until it will be cooked.
Prepare the sauce with lemon juice, roasted hazelnut paste and some water until it becomes smooth. Once the potatoes are ready, pour the sauce on it and serve them warm or cold.
