Sweet and sour salmon with pistachios

  • 4 slices of fresh salmon
  • ½ cup of tamari sauce
  • Fresh pressed juice of half lemon
  • 2 table spoons of Damiano organic agave syrup
  • 1 table spoon of Damiano organic pistachio paste
  • Some granulated pistachios
  • Fresh menthe leaves



Clean the salmon, take off the scales and fishbones. Put it in a baking tray on the baking paper with the skin on the bottom.

Mix tamari sauce, lemon juice, agave syrup and pistachio paste in a small bowl and spread it on the slices of salmon.

Bake it in a non-convection oven for 30-40 minutes heated in advance up to 180°C (cook time depends on the dimensions of the fish slices). Once baked, you can decorate it with some granulated pistachios and fresh or cooked vegetables you like more.
