Piadina with salmon and rocket with almond and yogurt sauce
- 4 wholegrain piadina (a kind of Italian flatbread)
- 300g of smoked salmon
- 100g of fresh rocket
- 150g of Greek yogurt (or skyr)
- 4 tbsps. of Amandino Damiano organic roasted almond paste
- Some fresh pressed lemon juice
- One tsp of mustard
Prepare the yogurt sauce. Mix the Greek yogurt or skyr with roasted almond butter, then add few drops of lemon juice, mustard and a pinch of salt. Keep it on side.
Wash and drain the rocket.
Cook the piadina in a pan or grill. Once ready, spread the yogurt sauce, put the smoked salmon and rocket. If you wish, you can season it with some olive oil.
Fold the piadina in two and warm them on the pan or grill and serve it hot.
