Peas houmous with pistachios and fresh vegetables
- 300g of clean peas, fresh or frozen peas
- table spoons of organic roasted pistachio butter
- A pinch of salt
- Fresh vegetables at your choice (carrots, celery, cucumber, red, yellow or green pepper, radish…)
- Lemon juice
Bring to the boil the water with salt and cook peas for 6-8 minutes, then drain it and rinse immediately with cold water so it will keep a green and fresh colour.
Put the peas into a food processor, add the pistachio butter, a pinch of pepper and blitz as smooth as possible.
Cut fresh vegetables into sticks and wet it with water with lemon juice, so it won’t become dark and dry and serve it with the peas houmous. e qualche proteina in più per un pasto completo e bilanciato. If you want to raise the quantity of proteins, you can decorate the houmous with granulated pistachios or almonds and a spoon of almond paste (Amandino).
