Chicken bites with yogurt and pistachio
- 300 g of chicken breast cut in small pieces like bites
- 125g of fat free natural yogurt
- 2 tbsps. of Damiano organic pistachio paste
- 3 tbsps. of flour or starch
- 2 tbsps. of extra virgin olive oil
4 hours before cooking, put the pieces of chicken in a bowl, add yogurt and the pistachio paste. Mix well and cover and let it marinate in fridge.
Tae the pieces of chicken, coat them with flour or starch and put them on side, on a plate, be aware to keep them separated one from the other. Add half glass of water to the remain yogurt sauce and keep it on side for cooking.
Put two tablespoons of extra virgin olive oil and warm it, then fry the chicken pieces on each side, they should get gold colored. Avoid putting the chicken bites one on the top one on the other, it should be all just on one level.
When the chicken is ready, add the remaining yogurt sauce and cook for 15 minutes with a lid on and additional 15 minutes without lid, on low flame, so to obtain a creamy sauce to be served together with the chicken.
Don’t use any spoon and don’t mix the chicken, just shake a bit a pan from time to time to avoid chicken bites to stick to the pan and to spread the sauce.
